If you have a sweet tooth, this recipe with honey is absolutely delicious; however, the options are limitless! They also happen to be super easy to make, easy to store, easy to take on-the-go and are healthy! Cashews are low in sugar and rich in fiber, healthy fats and protein. They are also a good source of much-needed minerals like copper, magnesium, and manganese - which are nutrients important for various processes in the body like energy production, immunity, bone health and brain health. To store cashews, you can keep them in an airtight container at room temperature for up to a week. Or if you want to extend their life longer, you can store roasted cashews in the refrigerator for four months or in the freezer for up to a year.
Here’s What You Need To Make These Honey Roasted Cashews
- raw cashews
- honey
- unsalted butter
- pure vanilla extract
- Sea salt
- granulated sugar
How to Make Honey Roasted Cashews
First, preheat your oven to 350°.
On a small rimmed baking sheet, add all the cashews and place in the oven for about 8 minutes. Let them cool, then place the roasted cashews in a bowl and set it aside.
In a small saucepan, combine the honey and vanilla extract and unsalted butter. Heat on low to medium-low heat, whisking until combined. Allow the butter to melt and the honey to bubble and thicken while constantly stirring for about 2-3 minutes.You can also do this in a microwave safe bowl, microwaving for about 25-30 seconds until butter is melted.
Pour the honey mixture over the cashews mixture and mix with a wooden spoon until completely coated. Spread the cashews in a single layer over a greased baking pan and bake for 15-20 minutes. (Toss the cashews using a wooden spoon every 5 minutes).
Once roasted and the nuts are thick and sticky, allow to cool for 7-10 minutes then sprinkle over the granulated sugar and sea salt and mix to incorporate. If needed, use your hand to separate the nuts.
Finally serve or store in an air-tight container.
