Ayoub's Best Chicken Salad
Chicken salad is summer's very own comfort food and of all the salads, this tends to go down best at barbecues, picnics or a little party appetizer. It's cold, it's creamy and it requires only a few ingredients and almost no time to make! In this recipe we've took the classic chicken salad and given it a twist by adding our delicious and nutritious salad topper (pumpkin seed, sunflower seed & dried cranberries) for extra nourishment and added texture.

Chicken Salad Ingredients:
Cooked chicken: You can poach some boneless chicken breasts or if you have some leftover rotisserie chicken you can use that too. They both taste great!
Mayonnaise: Real mayonnaise gives the best flavor here, but even better you can make your own! We'll explain how below.
Greek yogurt: We're going to use Greek yogurt to add a little bit of tang to the mixture and boost the healthiness of the salad.
Ayoub's salad topper: Made up of sweet cranberries, crunchy raw pumpkin seeds and delicious sunflower seeds, the salad topper not only adds a delicious texture to the salad but it is also extremely nourishing. This nutrient packed mix helps replenish energy and give our body the building blocks to repair and rejuvenate!
Spring onion: Green onions adds that delicious savory flavour without being too sharp. Red onion also works well and gives a nice crunchy texture.
Garlic powder: Cause almost everything needs a touch of garlic.
Salt & pepper: Always season to your taste.

How to make chicken salad:
Cook the chicken: If you are not using leftover rotisserie chicken, begin by poaching your chicken. Place the breasts in a small saucepan and cover with water. You can add some herbs to the water here, but its not entirely necessary as we are going to season the chicken later. Bring the water to a boil then quickly reduce the heat to a gentle simmer. Partly cover and continue to simmer gently for 10 minutes. Turn off the heat completely and allow the chicken to remain in the hot liquid for 15 to 20 minutes. Remove the chicken, allow to cool fully and dice.
Chop the onion: Chop up your spring onion and add it to the cool, diced chicken.
Add the salad topper: Pour in the salad topper to the mixture and there you go, your dry ingredients are ready!
Make your sauce: Whisk the yogurt, mayonnaise, salt, pepper and garlic powder together and pour over the chicken mixture.
Mix mix mix! Using a large spoon, toss all the ingredients together until well mixed.
Chill or serve immediately: Lots of people like to eat their chicken salad really cold. Chill in the fridge for 15 minutes if this is the case, or sere immediately after mixing.

On a bed of greens: This chicken salad makes an amazing light dinner served on a plate of your favorite greens.
In a sandwich: Make a delicious sandwich with this salad mix using lettuce and tomato,, stuff it into a pita or wrap it up in a tortilla for a super refreshing and healthy lunch.
Straight out of the bowl: Honestly this chicken salad is so good we'd be lying if we said we haven't dug in with a spoon and enjoyed it all on its own. Simple and delicious!
